Chilled Melon Soup

If you live on the east coast this summer, I know you are really feeling the heat. The idea of having a bowl of soup is most likely the last thing on your mind. If the weather has you feeling down, try this cool recipe for chilled melon soup. The melons and the juice will give you a good boost of healthy sugar, vitamins and hydration while the ginger will give you the kick in the pants you need to get through the day!

Now get crackin'! Chef Egg

Chilled Melon Soup

1 Cantaloupe, Skinned, Seeded and Diced ½ Honeydew, Skinned, Seeded and Diced

¼ C Honey

1 Orange, Juice and Zest

½ T Ginger, Minced

1oz Grand Marnier (Optional)

2 Kiwi, Skinned and Diced for Garnish

Place the fruit on ice to chill. Reserve ¼ cup each of the melons and the entire kiwi. Place the fruits into a blender and blend until smooth, adding more orange juice for your desired consistency. Keep in the fridge until service.
