Baked Squash with Feta Cheese

  • 1 tbsp. Olive Oil
  • 2 Yellow Squash, diced
  • 2 Zucchini, diced
  • ½ Onion, diced
  • ½ tsp. Salt and Pepper
  • 1 tsp. Dried Herbs
  • 1/3 C Feta Cheese
  • Place a large skillet over medium heat and add the olive oil to the pan. When the oil starts to smoke add the squash, zucchini and onions to the pan. Add the herbs and toss the vegetables, cook for 2 minutes, toss again and repeat. Top the squash with the feta cheese and broil until golden brown. Remove the pan from the under the broiler, garnish with herbs and serve.

    Pecan Crusted Chicken with Mustard Cream Sauce

  • 3-5 Chicken Thighs, boneless and skinless
  • ½ tsp. Salt and Pepper
  • ½ C Flour
  • 2 Egg
  • 1/2 C Pecans, Ground
  • 1 C Bread Crumbs
  • 2 tbsp. Butter
  • ¼ C White Wine
  • ¼ C Chicken Stock
  • 1 tbsp. Whole Grain Mustard
  • ¼ C Cream
  • Place a large skillet over medium heat and season the chicken in the salt and pepper. Mix the bread crumbs and pecans together. Lightly dredge the chicken in flour, egg then press into the pecan mixture. Place the butter in the skillet and when the foam subsides place the chicken into the pan. Cook the chicken on one side, until golden brown, about 4 minutes then turn and repeat. When the chicken is cooked through, remove form the pan. De-glaze the pan with the wine and chicken stock and reduce by half. Stir in the mustard and cream then season with salt and pepper. Serve the chicken on a platter, drizzle with sauce and garnish with herbs.

    Sautéed Parmesan Crusted Tilapia

  • 3 Tilapia Filets
  • 1 tsp. Salt and Pepper
  • 1 tbsp. Italian Dried Herbs
  • 1 C Flour
  • 3 Eggs
  • 1/2 C Parmesan Cheese
  • 1/2 C Bread Crumbs
  • 1 tbsp. Butter
  • 1 tbsp. Olive Oil
  • Mix the cheese and breadcrumbs together and place on a plate. Season the tilapia with salt, pepper, and dried herbs. Dredge the filets lightly in the flour, then eggs, then the cheese and breadcrumb mixture. Place a skillet over medium heat and add the butter and oil to the pan. When the foam subsides, place the filet in the pan and let cook for 3 minutes or until golden brown. Turn the fish once and repeat. Remove the fish from the pan and drain on a towel. Serve the fish on a platter and garnish with lemon and herbs.

  • 1 lb. Chicken Legs or Chicken Parts
  • 1 tsp. Salt and Pepper
  • ½ tsp. Paprika
  • 1 tbsp. Olive Oil
  • 1 Onion, diced

  • 1 tbsp. Garlic, chopped
  • 1 C Long Grain Rice
  • 2 C No Salt Chicken Stock
  • 1 Bay Leaf
  • 1 tbsp. Goya Sazon or 1 tsp. saffron
  • 1 Lime
  • ¼ C Chopped Parsley
  • Pre heat the oven to 325 F. Season the chicken with salt, pepper and paprika. Place a Dutch oven over medium heat and add the oil to the pan. When the oil smokes, place the chicken in the pan and brown on all sides. Remove the chicken from the pan; add the onion, bell pepper and garlic and sauté until soft. Add the rice to the pan and toss until it turns white. Add the chicken stock, bay leaf and sazon to the pan, stir and bring to a simmer. Cover the dish and place in the oven, cook for 30-40 minutes. Remove the dish from the oven, carefully remove the lid, squeeze the lime over the rice and garnish with fresh herbs.

  • 1/2 -1/3 C Cream Cheese
  • ¼ C Green Chilies, chopped

Remove the tortilla from the pan, spread a half of the cheese mixture over the browned side,then place back in the skillet, cheese side up. Top with the other tortilla and slowly cook until the cheese has melted and the tortillas are lightly browned on both sides. Serve with pico de gallo, guacamole or prepared salsa.

Place a tablespoon of the filling in the middle of the pasta, fold over and seal tight. Repeat with the rest of the filling. Keep the ravioli covered with plastic wrap during this process.

    To cook the ravioli, bring a large pot of salted water to a boil. Carefully place the ravioli into the water and cook for 3-4 minutes or until they float to the top.

  • Place all ingredients into a bowl and stir to combine
