J Lo Rollups

Ingredients

5 Flour Tortillas
8 oz Cream cheese
2T Taco seasoning
6oz Chili Peppers, canned
8oz Cheddar jack cheese

Directions

1. Soften the cream cheese in a bowl. Add the taco seasoning, and mix it up really well.

2. Spread a thin layer of the cram cheese mixture onto a flour tortilla. Top it with some chopped chilies and cheddar jack cheese and roll it up. The roll should hold together.

3. Cut the roll into bite size pieces and put them on a microwave safe plate.

4. Microwave for about 1 minute until the cheese has melted and the tortilla is warm.

5. Let the rolls cool for one minute and arrange on a plate. Serve these with some fresh salsa or guacamole.

 

Swedish Meatballs

Ingredients

1lb Ground Beef
TT Salt and Pepper
¾ C Chili Sauce
¾ C Grape Jelly

Directions

1. Season the ground beef with a little bit of salt and pepper and mix the seasonings in with your hands.

2. Scoop out a golf ball size piece of ground beef and roll it in your hands. Pop these in a microwave safe dish. Make sure to wash your hands well after doing this.

3. Microwave them for 4 minutes or until they are cooked through.

4. While those are cooking mix together equal parts of grape jelly and chili sauce in a bowl. Set this to the side.

5. When the meatballs are cooked drain of the excess fat. Add the sauce to the meatballs and coat well.

6. Take the meatballs back to the microwave and cook for 4 minutes. Stir them half way.

7. When they are done you can serve them by themselves, over rice or on a sub.


Hippy Goo Balls

Ingredients

10 Cookies
3C Raison Bran
1/2C Coconut
2C Chocolate Chips
1/2C PB

Directions

1. In a microwave safe bowl melt together the chocolate chips and peanut butter. Microwave for 1 minute and stir it every 20 seconds or until it is smooth. Do not over cook.
2. Chop up the Oreos into small chunks and add them to the bowl. Add half of the raison bran and coconut. Combine the wet and dry ingredients well. The mixture should hold together and not be too dry. If it is too wet, add the rest of the raison bran until it is perfect.
3. Scoop out piles of the mixture onto a plate lined with plastic wrap and put into the freezer for 15 minutes or until they are solid. Keep the goo balls in an airtight bag or container.

You can add any of your favorite cereals or cookies to this mixture. Go Crazy!

Caramel Corn

Ingredients

2C Popcorn
20oz Caramel Blocks
2T Water
1/2C Peanuts

Directions

1. Cook up some popcorn by taking a brown paper bag from the grocery store and fill it with the popcorn kernels. We use a brown bag because it is strong and we can throw it away when we are done.

2. Take the bag and microwave for 3:30 minutes or until the popping sound slows down. It is important not to burn the popcorn so listen with your ears and smell with your nose.

3. Unwrap the caramel blocks, you are going to need about 2 cups.

4. When the popcorn is done transfer the popcorn into another brown paper bag. We do this to separate the popped kernels from the un- popped ones.

5. Microwave the caramels with a tablespoon of water for 30 seconds and stir the mixture. Do this 2 more times or until the caramels are completely melted and smooth.

6. Open your popcorn bag and throw in a cup of peanuts. Pour the melted caramel and drizzle it over the popcorn and peanuts. Close the top of the bag and shake it up until all of the popcorn is coated.

7. Pour the caramel corn onto a sheet lined with wax paper and let it cool.

You can add Chocolate Chips, Almonds, Raison, Reeses Pieces, M&M’s, Sprinkles or anything cool you can think of to this Tasty Treat!

Greek Pita Pizza

Ingredients
2 Pita Bread
2 T Olive Oil
¼ C  Bell Peppers, Chopped
1 Tomato, Sliced
¼ C Black Olives, Pitted and Chopped
½ C Red Onion, Sliced Thin
½ C Feta Cheese

Directions
Spread a thin layer of olive oil on the top of the pita bread. Top with bell peppers, tomato, black olives, sliced red onion and feta cheese.

Pop this monster of a pizza in the toaster and cook until the top is golden brown. Very carefully take this out of the toaster and garnish with fresh green herbs.


Pepperoni Calzone

Ingredients
½ Fresh Dough Recipe
½ C  Cheese
½ Tomato, Sliced
8 Pepperoni Slices

Directions
On a floured surface roll out the dough until it is very thin. You want to create a large circle, but it does not have to be perfect.

Place the dough on a baking sheet that has been lined with corn meal. This will prevent your calzone from sticking.

Top one half of the dough with mozzarella cheese, tomato and pepperoni and a little sauce. Fold the other half of the dough over and cut off all but 1 inch. Pinch and crimp the crust so it is sealed.

Slice several slits in the top of the crust and bake at 450º F for10 minutes or until the calzone is golden brown. Let this cool when it comes out, it will be very hot.


Hawaiian Bagel Pizza

Ingredients
2 Bagels, Sliced
2 Ham, slices, chopped
¼ C Pineapple, chunks
¼ C  Pizza Sauce
½ C  Mozzarella Cheese

Directions
Cut your bagels in half. Spread with tomato sauce. Top with cheese, ham and pineapple.

Pop these in to the toaster oven and cook until golden brown. Be very careful when you take the pizza out of the toaster and let them cool down before eating.


English muffin Pizza Bianco

Ingredients
2 English Muffins, Sliced
¼ C Ricotta Cheese
½ C Mozzarella Cheese

Garnish Parmesan Cheese
Fresh Green Herbs

Directions
Slice the English muffins down the center. Spread a layer of ricotta cheese on the muffin and top with mozzarella cheese.

Cook these in the toaster oven until they are golden brown. Very carefully take them out and garnish with Parmesan cheese and fresh green herbs.

 

Fresh Dough

Ingredients
4C Flour
1T Sugar
1T Yeast
1.5 C Warm Water
2t Salt
3T Oil

Directions
Bloom the yeast by dissolving the sugar in the warm water in a large mixing bowl. Sprinkle the yeast over the water and mix lightly. Let this stand for 5 minutes.

Add 1 C of the flour, salt and oil and mix together. Slowly add flour until a soft dough has formed. You will not need to add all of the flour.

Kneed the dough on a floured surface for 10-15 minutes or until it springs back to the touch. Let this dough stand covered for 1 hour.

Punch the dough down and form into two separate balls. Cover and let these rise another 30 minutes. Use as a great crust for pizzas, calzones and fresh breadsticks!
