I love taco's and just about anything taco related. When it comes to taco related breakfast dishes, this recipe for Tex Mex "Migas" or "Chilaquilles" is right up my ally. "Chilaquilles" is a Mexican dish made by scrambling eggs together with sautéed onions, jalapeños, browned tortillas and topping with fresh pico de gallo and cheese. This is also a great recipe to get creative with by adding canned beans, bottled salsa, spicy sausage or chopped chicken and veggies.

Tex Mex Tortilla Egg Scramble
Place the olive oil in a large skillet over low heat, add the onions and jalapenos and cook for two minutes or until soft. Turn the heat up slightly, add the tortillas to the pan and toss to brown. While that is cooking whisk the eggs and water together, season with salt and pepper and pour over the tortillas. Slowly scramble the egg mixture until the eggs are soft but firm.
Toss the tomato, onion, cilantro and lime in a bowl, top the chiliquillas with the salsa and garnish with crumbled cojita cheese.
