Breakfast Sweet Potato Hash

Breakfast Sweet Potato Hash
Serves 2

  • 2 tbs Butter
  • 6 oz Pork Maple Sausage (Optional)
  • ½ Red Onion, Diced
  • 1 Bell Pepper, Diced
  • 1 Apple, Diced
  • 2 C Sweet Potatoe, Diced
  • 2 tbs Maple Syrup
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • Salt and Pepper
  • Place a large skillet over medium heat, add the butter and sauté the sausage for 3 minutes. Add the next 4 ingredients and sauté for 20 minutes, tossing every 3 minutes. When the potato is soft and has browned, add the spices and syrup, cook for 3 more minutes and then season with salt and pepper to taste.
