Easy Taco Soup

  • 2 tbsp. Oil
  • 8 oz Chicken Breast, Diced
  • 1 Onion, Diced
  • ¼ C Rice
  • 1 qt. Chicken Stock
  • 2 C Water
  • 1 Taco Seasoning, Packet
  • 1 can Canned Pinto Beans
  • 1 can Canned Corn
  • 1 can Canned Tomato and Jalapeño by Rotel
  • ¼ C Radish
  • ¼ C Onion
  • 1 Lime, Sliced
  • 2 tbsp. Cilantro
  • 2 tbsp. Oil
  • 4 Corn Tortillas Sliced
  • Season the chicken with salt and pepper. Place a large pot over medium heat, add the oil to the pot and brown the chicken well. Add the onions and rice and stir for 3 minutes. Add the next 6 ingredients and simmer for 20 minutes. While that is cooking, place the radish, onion, lime and cilantro into a bowl and stir to combine. To prepare the crispy tortillas, place a skillet over medium heat, add the oil and fry the tortillas until golden brown and sprinkle with salt to season. Serve the soup in a large bowl and top with the radish salsa and fried tortilla chips.

    Recipe looks great! Questions - 1) is the 1/4C of rice cooked previously or uncooked? 2) Do you think we could use whole grain rice to add a little fiber instead of white rice? and 3) Would it be possible to use vegetable broth instead of chicken broth?

    Chef Egg...

    1. Uncooked rice.
    2. You can use brown rice or even wheat berries for that extra special kick of fiber.
    3. You can use veggie broth or bouillon and it will turn our great!
